Chocolate Gelato

INGREDIENTS:
8 cups whole milk
10 oz. caster sugar
2 cups dark chocolate, chopped
1 tsp. vanilla extract
DIRECTIONS:
- Place the milk, sugar and vanilla extract into a saucepan and stir constantly while heating the pan slowly to dissolve the sugar. DO NOT BOIL. Once the sugar has dissolved completely, remove from the heat.
- Add the chopped chocolate to the pan and stir until fully melted. Leave the whole mixture to cool then transfer into ice cream maker and freeze according to the instructions.
