Ingredients – Croquettes:
4 oz fresh goat cheese
1 large egg, beaten
2 tbsp panko breadcrumbs
1 tbsp vegetable oil
Ingredients – Pecan Sauce:
1/3 cup pecan halves
1 tsp honey
1/2 cup pecan oil (or vegetable oil)
Directions:
1. Roll goat cheese into 8 small balls. Dip in flour, then beaten egg, then panko mixed with vegetable oil. Chill until firm.
2. Preheat air fryer to 395°F.
3. Air fry pecans at 395°F for 6 minutes. While still hot, blend with honey and pecan oil into a smooth sauce.
4. Place croquettes in the air fryer and cook for 9–11 minutes until golden.
5. Spoon pecan sauce onto a serving plate and place croquettes on top. Serve warm.
