Roasted Air Fryer Cauliflower with Dates and Pine Nuts Recipe

Ingredients:

1 large head cauliflower, cut into florets (about 8 cups)
Kosher salt and freshly cracked black pepper, to taste
4 tbsp olive oil
1/3 cup pine nuts
1 clove garlic, minced
1 sprig fresh rosemary
1/2 cup pitted Medjool dates, coarsely chopped

Directions:

1. Mix pine nuts with 1 tsp olive oil and air fry at 395°F for 1 minute.
2. Add garlic and chopped dates to the air fryer and cook for 2 minutes more.
3. Toss cauliflower florets with olive oil, salt, and pepper.
4. Air fry at 395°F for 11 minutes or until tender and slightly golden.
5. Toss cauliflower with the warm date-pine nut mixture and sprinkle with chopped rosemary. 6. Serve warm or at room temperature.
